Happy Tummy Recipes- Sausage and Tortellini with Gorgonzola Garden Salad

Just writing about this is making me hungry ok, it's delicious. This is a super easy and fast recipe for a fancier dinner alone, or to entertain guests. This is perfect for a dorm kitchen and a cook of intermediate experience. It's cheap, there's nothing fancy required, and it's a step up from Ramen.
 
Difficulty: Easy-Intermediate
Yields: 2-3 servings

 What you need:
2 cups your choice of Tortellini (I have Trader Joe's spinach and pesto)
2 your choice of Chicken Sausages (I have spinach onion and fontina)
1 Tomato
1 cup Mirepoix, or 1/3 cup chopped celery, 1/3 cup chopped carrots, and 1/3 cup chopped onion
1 clove Garlic
2 cups your choice Garden Salad (I have Trader Joe's Power to the Greens)
3 tbsp Olive Oil
2 tbsp Gorgonzola
1 tbsp Balsamic Vinaigrette
1 tsp Sea Salt
1 tsp Black Pepper
1 tsp Garlic
1 tsp Basil
1 tsp Parsley
1 tsp Paprika
 
Alright, let's begin. Start by boiling your tortellini in a pot of 3 cups of water and a sprinkle of salt. Watch the pasta carefully, you want to pull them out when they are al dente, or slightly firm but fully cooked. Use a fork to pull one out and give it a squeeze to see if it is firm. It shouldn't be hard, but should stand to a little pressure. When cooked, pull the tortellini out and drain and rinse with cold water. Let it stand.
 
 
Now for the stew: Cut your chicken sausages lengthwise then roughly chop them into half moon slices. Roughly chop your tomato. It doesn't matter if it's not pretty, it will disintegrate in the stew. Then, finely chop your garlic. In a sauce pan set to medium heat, pour three to four tablespoons of olive oil, and pour in garlic, tomato, sausages and mirepoix (if you don't have mirepoix just chop your carrots, celery and onion. Stir, until simmering and oil and tomato form a thin stew that bubbles. Lower the heat. Put in your spices, herbs, and salt to taste.
 
 
Finally, mix tortellini in stew mixture and set to low heat and stir for a few minutes. When thoroughly mixed, turn off heat and let sit for a bit.
 
 
Now for the Garden Salad: Grab a bowl and put in your garden mixture of choice.
 
 
Finally, break approximately 2 tbsp or a 1/4 inch chunk of gorgonzola over the leaves and drizzle Balsamic Vinaigrette on top

 
Now, enjoy! Yummmmm! This is a really healthy dish, it's chock full of veggies and leafy greens with essential nutrients. The herbs and spices are anti-inflammatory, and the olive oil is a good source of fat. The chicken sausage provides a lean source of protein. What's better is this doesn't even taste healthy.
